This Skottsberg Cast Iron skillet is prized for a number of special features. The pan is pre-seasoned, which means that the pan has been burned in with vegetable oil, allowing you to use the pan immediately after purchase. It is even better to re-season the pan yourself. This skillet is made from one piece of traditional cast wear-resistant cast iron. The skillet heats up slowly, but retains its heat for a long time. This casserole comes with a cast iron lid. This lid features "spikes" on the inside, allowing moisture to collect and fall back onto the ingredients. This continuously moistens your dish and will keep it extra tender and juicy.

This casserole has undergone heat treatment, making it rust and scratch resistant. This casserole can withstand high temperatures and is used today for much more than just frying meat. This skillet is great for roasting thick cuts of meat, stewing meat, deep frying and preparing delicious soups. This cast iron skillet is not only strong, robust and indestructible, it is also suitable for any heat source. Cooking on induction, open flame and in the oven is no problem for this casserole.

How do you use this skillet?
To prevent food from sticking to the bottom, it is important to go through the following steps. Before baking, take the ingredients out of the refrigerator so that they can already reach room temperature. Place the skillet on the heat source. Let the pan come to temperature slowly over low heat, adding oil or butter only when the pan has become well heated. This will take several minutes. Be sure to use a little more oil or butter when you first use the pan to prevent (protein-rich) foods from sticking to the pan quickly. Pat your ingredients dry as much as possible before placing them in the pan. Let the ingredients that do stick slightly to the bottom bake gently, without trying to loosen them from the bottom. If necessary, turn the stove down a bit and wait quietly for the food to loosen from the bottom.

How do I maintain and clean these bites?
After cooking, let the pan cool. Be sure not to rinse the hot pan directly under or in cold water. This causes thermal shock and may cause cracking. When the pan has cooled sufficiently clean it with warm water and a dishwashing brush or scratch-free scouring pad. Use little to no detergent; this is too acidic and damages the patina layer (natural non-stick coating) and can also cause rusting. Especially if you have not owned the pan for very long, this patina layer is not very strong yet. Place the pan NEVER In the dishwasher!

Should the above not have the desired effect, you can bring the pan to a boil with a small amount of water. Let the pan cool for a while and then you can remove the residue with a dish brush or other soft utensils. After cleaning, you can grease the pan with a very thin layer of Skottsberg burn-in oil and rub it out with a paper kitchen towel. This helps against rusting. Now store the pan in a dry place.

What is a patina layer?
Skottsberg cast iron pans are pre-fired, using only natural oil. This creates a natural non-stick coating. This patina layer is created because you heat the pan with a thin layer of Skottsberg inbrand oil until the pan begins to smoke. This Inbrand oil is available separately and is the best tool for burning in Skottsberg pans. Exposure to high temperatures breaks down long chains of fat molecules into short-chain polymers that bind with naturally produced carbon and bright iron, creating a type of glaze.

This is the patina layer that forms after these pans are burned in, and it has smooth, non-stick properties similar to a synthetic non-stick coating. It also forms a natural barrier between the air and the bare iron in your pan and acts as the first line of defense against rust. It is definitely advisable to re-brand the pan yourself before first use. To do this, carefully read the instructions attached to the pan.
