Sometimes you just crave a breakfast that feels like a treat. These airy pancakes, richly topped with fresh red fruit and a touch of syrup, are the perfect example. Ingredients
- 200 gr flour
- 2 tbsp sugar
- 1 tsp baking soda
- ½ tsp baking soda
- Pinch of salt
- 250 ml buttermilk
- 1 egg
- 2 tbsp melted butter (plus extra for frying)
- Fresh red fruit (strawberries, raspberries, blueberries)
- Syrup of your choice

Preparation
- Melt the butter over low heat or in the magnetron and allow to cool slightly.
- In a bowl, mix the flour, sugar, baking powder, baking soda and salt.
- In another bowl, whisk together the buttermilk and egg. Then add the melted butter and mix well.
- Add the wet ingredients to the dry and stir briefly to form a thick, fluffy batter (do not stir too smoothly).
- Heat a little butter in the skillet and scoop in small mounds of batter. Fry the pancakes for 2-3 minutes per side, until golden brown.
- Stack the pancakes on a plate and garnish with red fruit.
- Top it off with a splash of syrup of your choice, such as maple syrup, honey or caramel.
