Airy pancakes with red fruit

Sometimes you just crave a breakfast that feels like a treat. These airy pancakes, richly topped with fresh red fruit and a touch of syrup, are the perfect example. Whether you serve them at a leisurely brunch or as a sweet start to the day, this stack of pancakes is guaranteed to put a smile on your table.

Ingredients

  • 200 gr flour
  • 2 tbsp sugar
  • 1 tsp baking soda
  • ½ tsp baking soda
  • Pinch of salt
  • 250 ml buttermilk
  • 1 egg
  • 2 tbsp melted butter (plus extra for frying)
  • Fresh red fruit (strawberries, raspberries, blueberries)
  • Syrup of your choice

Preparation

  • Melt the butter over low heat or in the magnetron and allow to cool slightly.
  • In a bowl, mix the flour, sugar, baking powder, baking soda and salt.
  • In another bowl, whisk together the buttermilk and egg. Then add the melted butter and mix well.
  • Add the wet ingredients to the dry and stir briefly to form a thick, fluffy batter (do not stir too smoothly).
  • Heat a little butter in the skillet and scoop in small mounds of batter. Fry the pancakes for 2-3 minutes per side, until golden brown.
  • Stack the pancakes on a plate and garnish with red fruit.
  • Top it off with a splash of syrup of your choice, such as maple syrup, honey or caramel.

Serve immediately and enjoy an irresistibly sweet start to the day!
