Homemade pancakes

Little beats the smell of freshly baked pancakes. That moment when the batter hits the pan, the edges slowly turn golden brown and the first pancake is just imperfect, but the tastiest. Baking pancakes is not just cooking, it is a ritual. A moment of peace, fragrance and conviviality that you want to share with everyone.

Ingredients (for about 10 to 12 pancakes)

Pancake batter

  • 250 gr flour
  • 1 pinch of salt
  • 2 eggs
  • 500 ml of milk
  • 25 g melted butter (plus extra to grease)

Optional

  • 1 tsp vanilla sugar for a sweet version
  • Or a pinch of cinnamon for a warm flavor

Toppings

  • Powdered sugar
  • Syrup or honey
  • Fresh fruit, jam or chocolate sauce
  • Possibly a knob of butter

Supplies 

  • Frying pan
  • Mixing bowl
  • Whisk or mixer
  • Ladle
  • Spatula 

Preparation

  • Sift the flour and salt into a bowl. 
  • In another bowl, whisk the eggs with a little milk. Add this to the flour and mix into a smooth batter. 
  • Gradually pour in the rest of the milk while continuing to whisk, until the batter is nicely liquid. 
  • Stir in the melted butter and let the batter rest for 10 minutes. 
  • Heat a knob of butter in the pan over medium-high heat and pour in a thin layer of batter. 
  • Rotate the pan so that the batter spreads evenly. 
  • Bake the pancake until the top is dry and the bottom is golden brown. 
  • Flip the pancake over with a spatula and fry the other side briefly more until it is perfect in color. 
  • Repeat until all the batter is used up. 

Serve

Serve the pancakes warm, with powdered sugar, syrup or fresh fruit. Prefer savory? Add cheese or bacon in the pan for a hearty version. Or make it festive with a spoonful of cottage cheese, banana and honey. Whatever you choose, having a pile of steaming pancakes on the table will bring instant ambiance to your home.
