Poffertjes batter
- 250 gr flour
- 1 tsp baking powder
- 1 sachet vanilla sugar
- 1 pinch of salt
- 2 eggs
- 400 ml lukewarm milk
- 25 gr melted butter (plus extra to grease)

- Powdered sugar
- Small lumps of butter

Preparation
- Sift the flour, baking powder, vanilla sugar and salt into a bowl.
- In another bowl, beat the eggs with the milk. Gradually add the wet mixture to the dry ingredients and whisk until a smooth batter forms.
- Stir in the melted butter and let the batter rest for 10 minutes.
- Heat the pancake pan or skillet over medium-high heat and grease lightly with butter.
- Use a jug or squirt bottle to form small tufts of batter, either in the cavities of the poffertjes pan or as small tufts in the skillet.
- Bake the poffertjes until the top begins to dry and turn them over with a fork or skewer.
- Fry the other side for another 1 minute until golden brown.
Serve
Serve the poffertjes warm with a knob of butter and a generous layer of powdered sugar. For an extra twist, combine them with fresh red fruit or a drizzle of caramel.
