Ingredients
For the salad
- 150 g mixed leafy greens
- 150 g finely grated carrot
- 2 ripe avocados, thinly sliced
- 30 g sunflower seeds
- 30 g pumpkin seeds
- Edible flowers as desired
For the honey mustard dressing
- 6 tablespoons extra virgin olive oil, approximately 90 ml
- 2 tablespoons mild mustard
- 2 tablespoons of honey
- 2 tablespoons of lemon juice
- Salt and ground pepper

- Small bowl or glass jar
- Knife and cutting board

Preparation
- Wash the leafy vegetables and drain them well. Spread them out on a large platter.
- Sprinkle the grated carrot and avocado slices loosely over the salad.
- For the dressing, mix the olive oil, mustard, honey, and lemon juice in a small bowl or jar. Stir or shake until smooth, then season with salt and pepper.
- Pour the honey mustard dressing over the salad just before serving and finish with sunflower seeds, pumpkin seeds, and edible flowers if desired.
